The V2 will probably corner a hell of a lot better than the R Nine. As to heat? The V2 is more displacement, and inside of fairings, and the pistons are closer to the seat; so I’m 90% sure it will run warmer on your butt and legs. But if you want a good track bike and are looking at Ducati, it’s a great option.

Monster is more for lots of street and maybe once a year track day. In an ideal world I’d want both. Monster is more comfy for sure (at least on 848/1098, haven’t got to sit on a V2 streetfighter), but streetfighter is a lot better body position for real track days, if you do them semi regularly.
